The Cellars

The Fiorini family cellars were established at the very beginning of the 18th Century and at one stage was producing over 500,000 litres of wine each year. This was almost exclusively red with a small amount of the Moscato grape white wine . The cellars were rebuilt in 1889 by Vincenzo Fiorini but today wine production is reduced to a few thousand bottles for use by family and our bed and breakfast guests. The hand press that you can see inside needed 7 men to press the grape juice. Once we produced several thousands of litres of Extra Virgin olive oil (one of the best in the world) using the esteemed varieties of olive ‘Gargnŕ’ and ‘Casaliva’ The Gargnŕ trees are no longer planted because of the variable and uncertain production but those trees that remain are 130 years old. The few hundred litres of olive oil we now produce is of the Casaliva variety and is totally organic and of excellent quality ( acidity close to 0,1 %).
